  1. Prep the yam: Peel and cut kandagadda into 1-inch cubes. Wash well with water and lemon juice to remove itchiness.
  2. Parboil: Boil yam cubes in salted water for 8–10 minutes until just tender (not mushy). Drain and pat dry.
  3. Marinate: Toss the yam with red chilli powder, turmeric, coriander powder, and salt. Let it sit for 10 minutes.
  4. Fry: Heat oil in a pan. Add cumin seeds and curry leaves. Add the marinated yam pieces.
  5. Cook: Fry on medium flame for 12–15 minutes, turning occasionally, until all sides are golden and crispy.
  6. Serve: Garnish with fresh coriander and serve hot with steamed rice and dal.
